After harvesting, the cherries undergo processing to remove the outer fruit and reveal the beans inside. Different processing methods—washed, natural, or honey-processed—create distinct flavor profiles. Washed coffees tend to be clean and bright, while natural-processed coffees often have more fruity, complex flavors. The choice of processing method is an art form that significantly impacts the final cup.

Once processed, the green coffee beans are sorted, graded, and prepared for export. This is where relationships with ethical suppliers become crucial. We work directly with cooperatives and farmers who are committed to sustainable practices and fair compensation. These direct relationships ensure quality while supporting the communities that grow our coffee.

The beans then travel to our roastery, where our master roaster carefully develops each batch's flavor profile.
